Fresh Black Winter Truffles 2oz ( Tuber melanosporum vitt )
The story of the truffle hunter and his dog truffle hunting is one of the most beautiful truffle traditions. With the help of his dog the man find the precious tuber (Tuber melanosporum vitt): the black diamond of the table. As deep as 2 feet under the ground, it grows near oak trees and hazelnuts.
The picking season in Europe goes from December to March, a period in which black truffles are selected and treated with the most modern technologies behind the shadow of old tradition, protected by the Urbani family for many decades.
Picking season in Australia, where this tuber is harvested with excellent result, goes from June to August.
The fresh truffles are sent all over the world and they reach even the furthest destinations in perfect conditions, thanks to the special refrigerated containers which keep the product fresh for up to three days.
The classic recipe for black truffles is the salsa alla spoletina: for which the truffles are minced and added to warm,( but not frying!) olive oil, a touch of garlic, salt and pepper. This makes it ideal for bruschettas, spaghetti, meat and fish. You can grate black winter truffles on vanilla ice cream for the best dessert ever! 1 oz of product ;is recommended for 1 or 2 portions.
Product life: 1 to 2 weeks (our advice is using truffles in 2 or 3 days maximum), kept in a refrigerator at 37.5 F (3 C ), wrapped in paper towel.

Quality was decent. In my humble opinion, the product a little too dried and could have been a little fresher.

Metallic spoons should not be used while serving or eating it because they could leave an unfortunate metallic taste on the roe.

The Kaluga hybrid caviar is/was a great deal. We previously ordered and enjoyed with Latkes. And just enjoyed our second tin celebrating NYE.
The Kaluga Hybrid added the perfect touch to our low key New Year’s Eve celebration, making it an evening to remember. The caviar arrived the day after I ordered it and was packed well with ice packs that were still ice cold upon arrival. The caviar itself was refreshing and tasted like the sea. Wonderful experience all around.
Stainless Truffle Slicer
The order was dispatched and shipped quickly and I received it within 2 days. This Truffle slicer is a great value for the price paid. Well made, shaves thinly, and can easily be adjusted. Cleans easily and stores safely as the blade retracts flush to the body. Highly recommended. Customer Support quickly answered my questions before purchasing.
The slicer looks pretty, but the slicing process wasn’t smooth (see video below). Maybe it was me that don’t know how to use it in the right way....
This was our first time buying truffles and needed a slicer. It worked perfectly!!

Awesome products!! I made pan seared Sea Bass in Champagne Truffle sauce. Here's the recipe
Sea Bass- Using Truffle salt (or regular sea salt) lightly season 2 6oz sea bass fillet - not thicker than an inch and a half each . In a thick cast iron skillet heat canola or any other oil with high smoke point . Please don't use butter or EVOO as it has low smoke point. Add the fillet to the skillet and sear for 4 minutes on each side. Do not move it once you have added it to the skillet until its time to turn it over.
Champagne Truffle Sauce - In a pan heat 2 teaspoons of truffle oil and sauté finely chopped medium sized shallot (about 30 grams) Once shallot is translucent add 1/2 cup dry Champagne and 1.5 tablespoon Champagne vinegar. reduce it to about a third (about 10 min on medium / medium low heat). Add 1/2 cup heavy cream and continue cooking it until the sauce becomes thick enough to coat the back of spoon (about 5-6 minutes). Remove from heat and add 4 tablespoon butter cut into small cubes while continuously stirring the sauce until the butter melts. Add a pinch of sea salt and 1/2 teaspoon truffle oil and stir until its incorporated. Optionally you may also add 2 - 3 teaspoons of finely chopped fresh truffle (I use the bits and pieces left over after shaving the truffle slices )
Plating - Take some creamy mashed potatoes and spread it in the center of the dish to make a circular platform. Pour half the quantity of sauce on and around the mashed potatoes . Place the fillet in the center on top of mashed potatoes. Place shaved truffle slices on the sauce surrounding mashed potatoes. To garnish add a few slices of carrots and some micro greens on top of the fish. Use the remaining half of the sauce for plating the second fillet
With ingredients like sea bass, champagne and the truffles this dish is epitome of luxury :-)

Best truffle salt ever! Huge chunks of white truffles. I could smell the truffles through the bubble wrap when I opened the box. Our family loves it on just about everything but especially on avocados and popcorn.
Used it to finished off my roasted wild mushrooms at the end. Wow. Took the dish to the next level!
